Introduced from China to Korea during the 18th century, the Jerusalem artichoke (dwaeji-gamja) served as both a survival staple and soothing infusion in that country, enjoyed at either temperature and cherished for its sweetness and its time honoured contribution to daily wellness.
The Jerusalem artichoke flavours, with echoes of burdock and hazelnut, emerge across a velvety texture and deliver a wonderfully sweet sensation on the palate.
This tea is produced through organic farming methods and carries certification from an authorised independent testing organisation.
The Choi family, master craftspeople for 5 generations
Within the Boseong region in the country's south, Yeong Gi Choi preserves a family lineage established in 1937 together with his wife and sons. The outcome represents limited scale production, substantially organic in character, encompassing infusions and extraordinary green, black and dark tea varieties.

With a teapot or a tasting set: 5 minutes in water heated to 195°F.
According to the gong fu cha method: infusions during 30-40 seconds.
Prepare this herbal tea iced:
In a teapot or a carafe: infuse 8 g of leaves per 50 cl of water at room temperature for 50 minutes. Remove the leaves and store in the fridge.
