Beginning in the colonial period, the English adopted the custom of combining black teas sourced from various regions (Darjeeling, Indonesia, Ceylon) in different proportions to correspond with specific times of day: more robust infusions in the morning, gentler varieties in the afternoon. In keeping with this practice, Palais des Thés has formulated blends calibrated to align with the various moments throughout the day.
