The ingredients
Buckwheat (Fagopyrum esculentum)
A member of the polygonaceae family, this plant thrives in harsh climates such as that of Brittany in France. Its seeds may be eaten plain, roasted or ground into flour for galettes. Its roasted hazelnut notes are particularly prized in pastry-making!
Oats (Avena sativa)
Widely cultivated across Central Europe, this cereal is most often eaten in flake form – in granola or porridge, for example. Its lightly toasted flavour also makes it the basis for a versatile and much-loved plant-based milk.
Berries (Vaccinium myrtillus and Fragaria)
Berries deliver a sweet-tart taste. Widely used in pastry, strawberries and blueberries here add a touch of indulgence to this cereal-based creation.

Suggestion of preparation
Prepare this infusion warm:
In a tasting set or teapot: immerse 12 g of infusion in 50 cl of water at 90°C for 5 minutes.
Prepare this infusion iced:
In a teapot or carafe: immerse 8 g of infusion in 50 cl of water at room temperature for 30 minutes. Filter and store in a cool place.
Prepare this infusion latte:
In a large mug: heat 30 cl of rice or cow milk, then immerse 8 g of infusion for 5 to 10 minutes, depending on the intensity chosen. Filter and froth.
