Description
Kabuse belongs to the family of shaded teas: the bushes are covered for several weeks leading up to harvest, which mellows the tannins and reveals the distinctive umami character of the leaf.
The term kabuse translates to "to cover" and references the textiles draped across the plants. By restricting light penetration, this method cultivates a pronounced umami flavour alongside a notably silky, creamy mouthfeel.
This tea is perfectly suited for exploring the traditional Japanese brewing approach (kyusu or shiboridashi).
